Öğe Comparison of nutritional composition (Moisture, ash, crude protein, nitrogen) and safety (aflatoxin, nitrate/nitrite) of organic and conventional rice and lentil samples consumed in Ankara(Chartered Inst. of Building Services Engineers, 2016) Baydan, Emine; Küçükersan, Seher; Dikmen, Begüm Yurdakök; Aydin, Farah Gönül; Sevin, Sedat; Arslanbaş, Emre; Çetinkaya, Mustafa AlpIn the current study, organic and conventionally produced rice and lentil samples purchased from the supermarkets in Ankara, Turkey were analyzed for their nutritional composition, nitrate/nitrite content and aflatoxin contamination. Nitrate/nitrite concentrations were found to be significant (p<0.05) only for nitrate (higher in organic) and nitrite level (higher in conventional) in rice. No aflatoxin contamination was observed over limit of quantification (LOQ) and no difference was observed for dry matter. Ash value was found higher in organic than the conventional (p<0.05) rice; and vice versa for the lentil samples. Nitrogen and crude protein were higher in organic green lentil samples (p<0.001) than the conventional; whereas the differences of organic-conventional samples in terms of crude protein and the nitrogen content of the rice samples were insignificant (p>0.05). Since organic food market is increasing rapidly, more analysis regarding the nutrition composition and other potential risks such as mycotoxins are required to enlighten the consumers. © 2016, Chartered Inst. of Building Services Engineers. All rights reserved.Öğe Determination of some bacteria and indicator microorganisms in retail chicken meats(Kırgızistan Türkiye Manas Üniversitesi, 2017) Şahin, Seyda; Kalın, Recep; Arslanbaş, Emre; Moğulkoç, Mahmut NiyaziBu çalışmada, satışa sunulan beş farklı firmaya ait paketlenmiş taze tavuk etlerinden (but, göğüs, kanat ve bütün tavuk) oluşan toplam 400 örnek bazı bakteriler ve indikatör mikroorganizmalar yönünden incelenerek mikrobiyolojik kalitesinin araştırılması amaçlanmıştır. Tavuk et örneklerinde mikroorganizma sayıları (log10 kob/g) toplam aerob mezofil bakteri (TAMB); 5.16-5.68, Enterobacteriaceae; 3.52-4.03, koliform bakteri; 3.13- 3.61, Escherichia coli; 2.29-3.02, Staphylococcus aureus; 3.22-4.30, koagulaz pozitif S. aureus 1.53-3.44, Enterococcus spp.; 0.72-2.38, psikrofil bakteri; 5.06-5.44 ve maya-küf 5.07-5.62 aralığında saptandı. Sonuç olarak, bu çalışmada incelenen örneklerin TAMB, psikrofil bakteri, S. aureus ve maya-küf sayısı yönünden Türk Standartları Enstitüsü’nde belirtilen maksimum limitleri aştığı görüldü. Bu tavuk etleri mikrobiyolojik kalitelerinin düşük olması ve birçok patojen bakteri bulunması nedeniyle halk sağlığı yönünden potansiyel bir risk taşımaktadır. Bu nedenle, bu tür taze olarak tüketime sunulan tavuk et ve ürünlerinin üretiminden tüketimine kadar olan tüm aşamalarda HACCP ve GMP gibi uygulamalarla gıda güvenliği sağlanmalı, hijyenik tedbirler alınmalı ve rutin mikrobiyolojik kontrolleri yapılmalıdır.Öğe The Effect of Plantain Active Ingredient Aucubin on Isolated Rat Smooth Muscle Tissue and Primary Cell Lines(2020) Arslanbaş, Emre; Kara, Haki; Turgut, Nergiz Hacer; Güngör, Hüseyin; Doğan, Halef Okan; Atasoy, Mustafa Ozan; Kumru, Alper SerhatThis study aims to assess the pharmacodynamics of aucubin, the active ingredient in plantain (Plantago), in vitrorat bladder and trachea tissues, and explore its cell protective effects on primary lung and kidney cell lines. The study wascarried out by repeated applications of acetylcholine, atropine, verapamil and oxybutynin, alongside Ca ++ in a calcium-freeenvironment, on urinary bladder tissue, and repeated applications of acetylcholine, atropine, carbachol and mecamylamineon trachea tissue. At the same time, cell viability and catalase and superoxide dismutase activities was measured in primarycell lines. The results indicated that aucubin had a relaxant effect on urinary bladder and trachea tissues. It was conceivedthat aucubin acted as a cholinergic antagonist through different subreceptors (muscarinic-3 receptors). The results alsoindicated that aucubin caused a statistically insignificant increase in remaining at the level of the control group in cellviability in the primary lung and kidney cell lines at increasing concentrations (1-10 µM), while causing a significant reducein cell viability at 20 and 50 µM concentrations in the same cell lines. In conclusion, it is suggested that plantain, which isused in folk medicine, and its active ingredient aucubin might have beneficial effects on bronchoconstriction and otherrespiratory conditions, as well as on pulmonary and renal diseases, urinary incontinence, etc
