dc.description.abstractTremendous physicochemical and techno-functional activity of gums make them a good candidate to be widely applied in various fields including food, nutra/pharmaceutical, medical, cosmetics, and biosensors. Ultrasound technology is a promising method for green and non-thermal modification of gums and promotion of their techno-functionality. This chapter provides a detailed description and perspective of the ultrasound-assisted modification of gums and its impact on the structure, physicochemical, rheological, and interfacial performance of gums. The ultrasound-modified gums represent a great potential to be applied as new tuneable biopolymers for encapsulation of bioactive compounds, and design and development of delivery systems, emulsions, nanoparticles, and functional films and coatings. © The Editor(s) (if applicable) and The Author(s), under exclusive license to Springer Nature Switzerland AG 2021.
